YOUR MISSION (The Job Description)
The Sous Chef position reports to Night+Market management and is responsible for assisting the Executive Chef in leading and inspiring the BOH team and overseeing food preparation. All duties are to be performed in accordance with departmental and property policies, practices, and procedures as well as all SNHD regulations.
THE NITTY-GRITTY (The Essential Job Duties)
- Maintain and exhibit a complete knowledge and understanding of all food products and skillfully apply culinary and cooking techniques.
- Assist kitchen staff with the execution of service.
- Maintain supervisory role in the absence of the Chef and execute Expo responsibilities.
- Conduct inventory to ensure proper par levels, requisitions, and storage of all products.
- Develop and demonstrate a critical eye for upkeep and cleanliness of the Property.
- Work with E.C. and G.M. to ensure all equipment is meticulously kept, maintained, serviced.
- Meet cleanliness standards as dictated by the SNHD.
- Work with Stewarding Team to keep all areas properly groomed and clean.
- Disseminate accurate information and responses in a timely manner.
- Keep constant communication with the E.C. and G.M. to fulfill and address any staff issues or guest needs while exercising confidentiality where needed.
- Properly and effectively communicate with all vendors to ensure timely product delivery.
- Provide regular and meaningful feedback to all kitchen employees and know all staff member's names.
- Take ownership of financial reporting and operations for the BOH.
- Work with E.C. to create employee schedules. Manage staffing to the level of business ensuring profitability, production, and guest satisfaction.
- Assist E.C. by controlling purchasing, receiving, purveyors list, and inventory to manage costs of goods.
- Assist E.C. to analyze monthly financial reports to develop cost-saving measures.
- Lead by example, engage and inspire fellow staff.
- Foster and maintain a professional and respectful work atmosphere.
- Adhere to federal, state, and local labor laws and house policies.
- Openly receive employee feedback. Be an accountable resource for all employees.
- Conduct on the job training for cooks and prep cooks.
- Assist with the development of recipe book and maintaining accurate and up-to-date employee files.
- Lead by example; work alongside, support, and inspire fellow staff.
- Coordinate with E.C., G.M. to ensure a seamless operation between BOH + FOH staff.
- Facilitate and help oversee successful menu changes.
- Foster and uphold high standards of excellence, execution, and cleanliness to uphold systems for station preparation, organization, storage, and cleaning.
- Help ensure a safe and healthy working environment.
- Maintain an active ServSafe Food Manager certification and SNHD Food Handler's card.
- Lead by example and execute proper health and safety protocols.
- Assist in overseeing successful SNHD health and CCFD fire inspections.
- On time completion of all required training
WHAT IT TAKES (The Qualities We Look For)
- Active SNHD Food Handler's card.
- Active ServSafe Food Protection Manager certification.
- Strong analytical skills.
- Strong communication skills, inclusive of spelling and grammar.
- Strong line cook background and at least two years of recent Sous Chef, or comparable, experience at a high-volume establishment.
- Experience with the following software: Google Suite (Google Drive, Docs, Sheets, Slides), Avero, and the Microsoft Suite.

- Monday-Sunday
- Workweek is subject to change.
- Flexibility for coverage and/or emergencies is required.
- Ability to move quickly and efficiently through the Kitchen.
- Will work in hot and cold, confined spaces.
