Provides F & B services that accommodate the resort guests requirements that maximize the capture ratio and revenues per available room while providing expedient guest services that exceed the guest expectations in both presentation and service time.
Responsibilities:
- To assist in operating the department within the budgeted guidelines from both a revenue and cost perspective.
- To assist in the implementation of a menu concept that appeals to our in-house guest that will increase the outlets capture ratio and revenues per occupied room as compared to budget.
- Ensure that the department complies with all health department regulations on a day to day basis.
- To maintain a potential cost on every item sold to ensure that the department meets and/or exceeds the budgeted expectations relative to cost of sales.
- Ensure that the café and marketplace cooler items, frontline is stocked & faced, organized and all retail items have been properly priced and positioned for sale.
- To ensure that all P & P and checklist are being implemented and executed on a day-to-day basis.
- To take competitive bids on all perishable items on a weekly basis and purchase based on quality and price.
- Conduct focus groups to ensure that the department is meeting and exceeding the guests expectations.
- Train and develop staff on receiving techniques that compliment verifying quality, weight/count and verification against what was ordered and invoiced.
- Ensure that all deliveries are priced and dated prior to being stored.
- Ensure that all perishables are rotated “first in, first out”
- Keep all F & B areas clean and organized including both front and back-of-the-house areas.
- Ensure that all staff is in a clean proper uniform with their respective name badge.
- Ensure that a jigger is used when pouring liquor.
- Ensure that a check is issued for every item ordered by a guest.
- Shop the department to ensure that the proper P & P are being followed and enforced.
- Create an ongoing variety of VIP amenities that are perceived to be upscale and that the presentation is of a high standard.
- Ensure that all room service and VIP china, glass and flatware are retrieved to reduce privilege within the department.
- To ensure that the department has adequate supplies to meet the operational needs.
- Assist with all catered / banquet functions.
- Ensure that all subordinates have a thorough understanding of their respective job descriptions.
- To ensure that all members of staff have been adequately trained and that they understand their responsibilities, departmental goals and objectives.
- Train staff on the importance of safety to prevent on the job injuries and guests incidents.
- To review employee schedules according to the business forecast and business demand; while complimenting the department’s budgeted staffing guidelines.
- Induct, orient and train assigned personnel to meet their departmental responsibilities.
- Operate in compliance with all local, state, and federal laws and government regulations.
- Maintain and ensure a high level of professionalism throughout the department and staff.
- Ensure that all staff members smile and greet all guests and co-workers.
- Expedite special projects as requested within the timeframe required.
- Communicate effectively with all departments.
- Conduct monthly departmental meetings with staff.
- Participate, train and develop staff on all property emergency procedures that protect both our guests and employees on a day to day basis.
- Maintain a safe and secure environment at all times for both the employees and guests.
- Schedules banquet service staff to forecast and service standards, while maximizing profits.
- Participating in and Leading Banquet Teams
- Attends and participates in all pertinent meetings.
- Leads shifts and actively participates in the servicing of events.
- Applies and continually broadens knowledge of food and beverage at overall event presentation.
Job Requirements:
- Previous F & B management experience (5-8 years minimum)
- Hotel experience is a must
- Well rounded knowledge in both food and beverage areas.
- Product knowledge.
- Must have excellent interpersonal skills.
- Accurate forecasting abilities.
- Supervisory and leadership skills.
- Have Banquet experience
